The VITORI Philosophy
For centuries, the Italian morning has been defined by two rituals: the pull of espresso and the heat of the oven. Il Gemello was born from a simple provocation — what if the machine understood that these are not two separate acts, but one continuous gesture of devotion?
Our dual-chamber thermal architecture shares a single heat core, routing energy between the 450°C pizza stone and the 9-bar extraction group with a proprietary brass manifold developed over seven years in our Modena atelier.
Dual-Chamber Architecture
The Pizza Chamber
A refractory cordierite stone, fired to 450°C in under 12 minutes. The domed radiant ceiling replicates the thermal dynamics of a traditional Neapolitan wood-fired oven, producing leopard-spotted cornicione in 60–90 seconds.
The Espresso Group
A commercial-grade 58mm extraction group with saturated brass grouphead, fed by a dual-boiler system with PID temperature control. The integrated burr grinder delivers 18g doses with stepless micro-adjustment.
Materials & Construction
Every Il Gemello is assembled by hand in our workshop outside Modena, using techniques inherited from automotive and aerospace manufacturing. No plastic. No compromise. Each unit is signed by its maker and ships with a certificate of provenance.
Marine-grade chassis, bead-blasted to a matte satin finish. Resists heat cycling, corrosion, and the everyday chaos of an Italian kitchen.
The proprietary thermal manifold that routes heat between chambers. Cast using lost-wax process, then CNC-finished to ±0.02mm tolerance.
Sourced from quarries in Sardinia. Kiln-fired at 1,280°C to achieve the thermal mass and porosity profile of a centuries-old forno a legna.
Handles and dial surrounds carved from Canaletto walnut, hand-oiled. Each piece is grain-matched and develops a unique patina over years of use.
The pizza chamber's observation window uses laboratory-grade borosilicate glass rated to 500°C, providing clear sight of the cooking stone.
Ships in a custom vegetable-tanned leather carrying case with embossed VITORI monogram. Because even unpacking should feel ceremonial.
